Kale Chips + Almond Iced Coffee


Today I made a rash decision to let my inner vegetarian take over as I strived to start and finish (Hooray, I did!) The Island of Doctor Moreau by H. G. Wells. Ironic as it is, this aspiring writer doesn't find joy in reading novels. I like reading non-fiction work, poetry and the like though. But sadly, I had no choice but to crawl my way through the pages of this fable. And as always - whenever I try to be productive for school - I have the need to have finger food to keep me awake. And being the junk food lover who is also a die hard fan of the green stuff, and is thinking of being "healthy" again,  I thought I'd whip something up. I followed a recipe from the Vegetarian Times. (Check out their recipes! They have really awesome ones)

I made Kale Chips. Now some people might find it weird to make chips out of green, leafy vegetables but they're surprisingly good! They're pretty quick to make too. The original recipe can be found HERE and the only thing I added to the recipe was a sprinkle of parmesan cheese after they bake. It gives the chips flavour.


They don't look so appealing, huh? That's because I burned quite a few of them but not to the point of disposal. What do they taste like, you ask? Kale leaves are normally a bit bitter when raw or steamed for a short while. On the other hand, when baked, coated with olive oil and salt, they taste like popcorn. They even have that same crunch. I am not even kidding.

(I added cherry tomatoes on the side to add colour and because I love them. Yum!)

Right after finishing the book at about eleven o'clock, I thought I needed caffeine to keep me up so I can write this entry. Instead of having the good `ole brewed coffee, again, I thought I'd whip something up. 

Voila, my Almond Iced Coffee.


Now I didn't get the recipe from anywhere so I'll list down the ingredients I used. Pardon for not being able to provide measurements. I say just go with your gut feel, according to your liking.

Ingredients:
- Amaretto (Disaronno Almond Liqueur)
- brewed coffee
- brown sugar
- milk
- whipped cream to top
- caramel syrup to top
- wafer stick (optional)

If it doesn't taste good, you're probably doing it wrong. Kidding. It might not be your type of iced coffee. Hey, this was created on a whim after all.
